Recipe

Servings: 4 bowls
Prep + Cook Time: ~35 minutes

Ingredients

  • 4½ cups cubed sweet potatoes – roasted with avocado oil, salt, and pepper. (or seasoned to preference)
  • 1 lb lean ground beef (or lean turkey/turkey alternative)
  • 2 cups low-fat cottage cheese (adds creamy texture and extra protein)
  • 1 avocado, sliced
  • 4 Tbsp hot honey
Feel free to anything of your choosing! Rice, broccoli, vegetables, etc!
 

Instructions

  1. Preheat the oven to 425°F. Toss sweet potato cubes with oil, salt, and pepper (or with your preferred seasonings), then roast about 30 minutes, flipping halfway.
  2. Meanwhile, cook the beef in a skillet over medium-high heat. (add preferred seasoning)
  3. Assemble bowls: start with roasted sweet potatoes, then add the seasoned beef, cottage cheese, avocado slices, and finish with a drizzle of hot honey. Enjoy!
